Skillet Soup

Prep time: 15 minutes

Cook time: 35-45 minutes

Materials:

  • 1 lb. ground turkey/ pork
  • 2 onions chopped
  • 3 garlic cloves diced
  • 1 tsp chili
  • 1 tbsp. dried oregano
  • Salt and pepper to taste
  • 2 tomatoes chopped
  • 1 cup tomato sauce
  • ½ tbsp. dried parsley
  • 3 bell peppers chopped
  • 1 can kidney beans rinsed and drained
  • Small pasta of your choice
  • Fresh parsley for garnish (optional)
  • 5-6 cups chicken stock (I used water and a bouillon cube)
  • Vegetable oil

Process:

  1. In a skillet with high sides add in a few tbsp. of vegetable oil (just enough to coat the bottom of the pan). Leaving the heat on medium, add in the onions. Cook, stirring often, for a few minutes until the onions soften.
  2. Add in the garlic and cook until fragrant. 
  3. Add in the bell peppers. Cook until the peppers soften. 
  4. Add in the tomatoes and season with salt. 
  5. Add in your ground meat. Cook, breaking the meat up until it is fully cooked through. 
  6. Add in the tomato sauce and chicken stock. 
  7. Add in the kidney beans and let the mixture come to a boil.
  8. Once boiling add in your pasta and season with chili, dried oregano, dried parsley, salt and pepper.
  9. Simmer the soup until the pasta is fully cooked through. Remove from heat and let sit for 10-15 minutes.
  10. Plate, garnish with fresh parsley and ENJOY!
