Prep time: 15 minutes
Cook time: 35-45 minutes
Materials:
- 1 lb. ground turkey/ pork
- 2 onions chopped
- 3 garlic cloves diced
- 1 tsp chili
- 1 tbsp. dried oregano
- Salt and pepper to taste
- 2 tomatoes chopped
- 1 cup tomato sauce
- ½ tbsp. dried parsley
- 3 bell peppers chopped
- 1 can kidney beans rinsed and drained
- Small pasta of your choice
- Fresh parsley for garnish (optional)
- 5-6 cups chicken stock (I used water and a bouillon cube)
- Vegetable oil
Process:
- In a skillet with high sides add in a few tbsp. of vegetable oil (just enough to coat the bottom of the pan). Leaving the heat on medium, add in the onions. Cook, stirring often, for a few minutes until the onions soften.
- Add in the garlic and cook until fragrant.
- Add in the bell peppers. Cook until the peppers soften.
- Add in the tomatoes and season with salt.
- Add in your ground meat. Cook, breaking the meat up until it is fully cooked through.
- Add in the tomato sauce and chicken stock.
- Add in the kidney beans and let the mixture come to a boil.
- Once boiling add in your pasta and season with chili, dried oregano, dried parsley, salt and pepper.
- Simmer the soup until the pasta is fully cooked through. Remove from heat and let sit for 10-15 minutes.
- Plate, garnish with fresh parsley and ENJOY!
