Blueberry Banana Muffins w/ Crumble Topping

Prep time: 15-20 minutes

Cook time: 20-24 minutes

Muffin Materials:

  • 1 1/2 cups flour
  • 3/4 cups old fashioned oats
  • Pinch of salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup blueberries
  • 3 ripe bananas
  • 1/2 cup Vanilla Greek yogurt
  • 1 tbsp. vanilla extract
  • 1 large egg
  • 1/2 cup sugar

Crumble Topping Materials:

  • 4 tbsp. cubed cold unsalted butter
  • 1/4 cup old fashioned oats
  • 3 tbsp. flour
  • 1 tbsp. sugar

Process:

  1. Preheat the oven to 350 degrees F and line a muffin tin with some disposable liners. Set aside.
  2. In a mixing bowl combine the flour, oats, salt, baking powder and baking soda. Mix well. Taking 1 tbsp. of the mixture coat the blueberries.
  3. In a separate bowl add in the bananas and mash using the back of a fork.
  4. Add in the egg and mix to incorporate.
  5. Scoop in the Greek yogurt and vanilla extract. Mix until well combined.
  6. Add in the sugar and mix to incorporate.
  7. Pour the dry ingredients in and mix until everything is nicely combined.
  8. Fold in the blueberries.
  9. Divide the dough evenly between 12 muffin liners and set aside.
  10. In a small mixing bowl combine all the topping materials and using a pastry cutter or back of a fork, work the dough until you get the consistency of sand.
  11. Top the muffins with the mixture.
  12. Bake for 20-24 minutes.
  13. Let cool completely, plate and ENJOY!
