Turkey Chili

Prep time: 15-20 minutes

Cook time: 90-120 minutes

Materials:

  • 1 lb. ground turkey
  • 28 ounce crushed tomatoes or tomato sauce
  • 3 cups chicken broth
  • 15 oz kidney beans drained and rinsed
  • 15 oz black beans drained and rinsed
  • 1 large onion chopped
  • 3 large garlic cloves diced
  • 1 bell pepper chopped (any bell pepper you’d like)
  • 1 chili pepper (decide on amount depending on spice level)
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp marjoram
  • 2 tbsp. tomato paste
  • 1 tbsp. cocoa powder
  • Salt and pepper to taste
  • 2-3 tbsp. olive oil

Process:

  1. In a large soup pot or Dutch oven add in the olive oil. Keeping the heat on medium/ high, add in the onions. 
  2. Cook until slightly golden, about 3-4 minutes, stirring often.
  3. Add in the garlic and cook until fragrant.
  4. Add in the bell pepper and chili pepper. Stir and cook for 2-3 minutes.
  5. Add in the ground turkey and season with salt and pepper. Stir breaking up the turkey, and cook until the turkey is fully cooked through, about 4-5 minutes.
  6. Once the turkey is fully cooked through, add in the tomato paste and stir making sure everything is incorporated.
  7. Add in the tomato sauce or crushed tomatoes as well as the chicken broth.
  8. Season with chili powder,cumin, marjoram, cocoa powder, salt and pepper. Mix well and let the mixture come to a boil.
  9. Lower the heat to low and allow the mixture to simmer. 
  10. Cover and simmer for 90 minutes or until the mixture has thickened, stirring occasionally.
  11. Plate, top with some cheddar cheese (optional) and ENJOY!
