Prep time: 15-20 minutes
Cook time: 90-120 minutes
Materials:
- 1 lb. ground turkey
- 28 ounce crushed tomatoes or tomato sauce
- 3 cups chicken broth
- 15 oz kidney beans drained and rinsed
- 15 oz black beans drained and rinsed
- 1 large onion chopped
- 3 large garlic cloves diced
- 1 bell pepper chopped (any bell pepper you’d like)
- 1 chili pepper (decide on amount depending on spice level)
- ½ tsp chili powder
- 1 tsp cumin
- 1 tsp marjoram
- 2 tbsp. tomato paste
- 1 tbsp. cocoa powder
- Salt and pepper to taste
- 2-3 tbsp. olive oil
Process:
- In a large soup pot or Dutch oven add in the olive oil. Keeping the heat on medium/ high, add in the onions.
- Cook until slightly golden, about 3-4 minutes, stirring often.
- Add in the garlic and cook until fragrant.
- Add in the bell pepper and chili pepper. Stir and cook for 2-3 minutes.
- Add in the ground turkey and season with salt and pepper. Stir breaking up the turkey, and cook until the turkey is fully cooked through, about 4-5 minutes.
- Once the turkey is fully cooked through, add in the tomato paste and stir making sure everything is incorporated.
- Add in the tomato sauce or crushed tomatoes as well as the chicken broth.
- Season with chili powder,cumin, marjoram, cocoa powder, salt and pepper. Mix well and let the mixture come to a boil.
- Lower the heat to low and allow the mixture to simmer.
- Cover and simmer for 90 minutes or until the mixture has thickened, stirring occasionally.
- Plate, top with some cheddar cheese (optional) and ENJOY!
