Crockpot Turkey Chili

Prep time: 15 minutes

Cook time: 4.5 hours- 8.5 hours

Materials:

  • 1 lb lean ground turkey
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 garlic cloves diced
  • 1 jalapeno diced (if you like spice and 2)
  • 1 15 oz. can cannellini beans rinsed and dried
  • 1 15 oz can red kidney beans rinsed and dried
  • 1 14.5 oz can chopped tomatoes
  • 1 28 oz can crushed tomatoes
  • 2 tbs. tomato paste
  • 1 1/2 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 3-4 tbs vegetable oil or olive oil
  • Sharp cheddar cheese (optional)
  • Green onions (optional)

Process:

  1. In a skillet over medium/ high heat add in the vegetable oil and chopped onion. Cook 3-4 minutes until onions cook down slightly stirring occasionally.
  2. Add in the green pepper. Stirring often cook an additional 2-3 minutes.
  3. Add in the ground turkey and cook breaking the turkey up with a wooden spoon. Cook until you don’t see any more pink about 4 minutes or so.
  4. Add in the garlic and jalapeƱo. Cook for 60 seconds and add in the tomato paste. Continue to cook and stir until the tomato paste is distributed throughout the mixture. Finish off with salt and pepper and remove from stove.
  5. Into the insert of the slow cooker add in the ground turkey and veggie mixture. Finish off with both types of beans, diced tomatoes, crushed tomatoes, chicken broth, chili powder, cumin, oregano, salt, and pepper. Stir well.
  6. Cook 4 hours on high and 8 hours on low.
  7. Top with cheddar cheese and green onions (optional). ENJOY!

Whipped Coffee

Makes 2 servings

Materials:

  • 2 tbs. instant coffee
  • 2-4 tbs. sugar
  • 2 tbs. hot water
  • cups whole milk
  • Ice

Process:

1. In a mixing bowl add in instant coffee, sugar, and hot water. Using an electric hand held mixer whip the mixture until fluffy and stiff.

2. Take 2 glasses and add desired amount of ice in each glass. Pour in 1 cup of milk in each. Top with a few tbs of coffee mixture and ENJOY!

Crescent Roll Cheese Danish

Prep time: 15 minutes

Cook time: 9-15 minutes

Materials:

  • 1 package cream cheese softened
  • 1 egg yolk
  • 1 tbs. vanilla
  • 1/4 cup powdered sugar (additional 1/4 cup for glaze)
  • 1-2 tbs. whole milk
  • 1 whole egg along with tbs of water

Process:

  1. Preheat the oven to the instructions listed on your crescent roll tube and line a baking sheet with some parchment paper. Set aside.
  2. In a mixing bowl combine the cream cheese, egg yolk, and vanilla. Using an electric hand mixer, mix well until everything is nicely combined.
  3. Start to gradually add in the 1/4 cup of powdered sugar. Mix well and set aside.
  4. Open the crescent rolls and place them as a whole on your baking sheet, do not tear them apart. Instead taking your fingers pinch the seams of the crescent rolls together to create one rectangular piece (watch video for visual).
  5. Taking a knife or a pizza cutter cut diagonal strips into the dough about 2-3 inches from the edge. Do this to both sides making sure to leave the middle 2 inches or so untouched (again watch the video for a better visual).
  6. Spread the cream cheese into the middle and start to fold each piece of cut dough into the center alternating from one side to the next.
  7. In a small bowl combine one egg and water and mix very well. Taking a pasty brush, brush the egg wash over the pastry dough.
  8. Bake according to package instructions.
  9. In a separate small mixing bowl combine 1/4 cup of powdered sugar and milk. This will create your icing. If you find that it’s too thick add more milk.
  10. Spread icing over slightly cooled danish and ENJOY!
