Prep time: 15-20 minutes
Cook time: 50-55 minutes
Cake Materials:
- 1 ½ cups flour
- 1 ½ tsp baking powder
- Pinch of salt
- ⅔ cup granulated sugar
- 2 eggs ½ cup whole milk
- ½ cup unsalted butter softened
- 2 medium apples peeled, cored and cubed
Cinnamon Mixture Materials:
- 1 tsp ground cinnamon
- ¼ tsp nutmeg
- ½ cup brown sugar
Process:
- Lightly grease a loaf pan lined with some parchment paper and set aside.
- Pre heat the oven to 350 degrees F.
- In a small mixing bowl combine the ground cinnamon, nutmeg and brown sugar. Mix well and set aside.
- In another small bowl combine flour, baking soda and salt. Mix well and set aside.
- In a medium sized mixing bowl add in the butter and both types of sugar. Using a hand help mixer, cream the mixture together until fully combined.
- Add in the vanilla and then mix in one egg at a time.
- Add in the whole milk and mix until everything is combined.
- Switch to a spatula and fold in the dry ingredients.
- Take half of the batter and pour it into the bottom of the loaf pan.
- Place the cubed apples over the top and tap them in lightly into the batter, and cover with half of the cinnamon mixture.
- Pour the remaining batter over the apple and cinnamon mixture and smooth it out best you can.
- Top with the remaining cinnamon mixture and bake for 50-55 minutes, or until a skewer inserted into the center comes out clean.
- Let cool, slice and ENJOY!
