Prep time: 15-20 minutes
Cook time: 55-60 minutes
Materials:
- 1 butternut squash diced
- 3 apples of your choice cubed
- 1 cup frozen blueberries
- 1/4 cup sugar
- 1/4 cup brown sugar
- 3 tsp cornstarch
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon
- Pinch of salt
For crumble topping:
- 1/3 cup flour
- 1/2 cup oats ‘
- 1/2 cup brown sugar
- 1/2 cup cold unsalted butter
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Process:
- Preheat the oven to 400 degrees and grease a casserole dish with some unsalted butter or cooking spray, set aside.
- In a large mixing bowl combine the butternut squash, apples, blueberries, both types of sugar, cornstarch, pumpkin pie spice, cinnamon and pinch of salt. Mix well to combine.
- Pour the mixture into the prepared baking dish.
- In a food processes add in the cold butter, flour, oats, brown sugar, cinnamon, nutmeg and salt.
- Pulse until the butter is broken up and mixed in with everything else. Don’t over mix so that the butter doesn’t stick together.
- Pour the mixture over the top of the already prepped mixture.
- Bake for 55-60 minutes or until everything is soft and golden and the mixture is bubbly.
- Let rest for a few minutes before serving.
- Plate, top with vanilla ice cream (optional) and ENJOY!
