Butternut Squash & Apple Bake

Prep time: 15-20 minutes

Cook time: 55-60 minutes

Materials:

  • 1 butternut squash diced
  • 3 apples of your choice cubed
  • 1 cup frozen blueberries
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 3 tsp cornstarch
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • Pinch of salt

For crumble topping:

  • 1/3 cup flour
  • 1/2 cup oats ‘
  • 1/2 cup brown sugar
  • 1/2 cup cold unsalted butter
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

Process:

  1. Preheat the oven to 400 degrees and grease a casserole dish with some unsalted butter or cooking spray, set aside.
  2. In a large mixing bowl combine the butternut squash, apples, blueberries, both types of sugar, cornstarch, pumpkin pie spice, cinnamon and pinch of salt. Mix well to combine.
  3. Pour the mixture into the prepared baking dish.
  4. In a food processes add in the cold butter, flour, oats, brown sugar, cinnamon, nutmeg and salt.
  5. Pulse until the butter is broken up and mixed in with everything else. Don’t over mix so that the butter doesn’t stick together.
  6. Pour the mixture over the top of the already prepped mixture.
  7. Bake for 55-60 minutes or until everything is soft and golden and the mixture is bubbly.
  8. Let rest for a few minutes before serving.
  9. Plate, top with vanilla ice cream (optional) and ENJOY!
