Materials:
- 1 1/3 cups flour sifted
- 1 tbsp. baking powder sifted
- Pinch of salt
- 4 apples of your choice (I used Macintosh) sliced thinly
- 5 eggs at room temperature
- 1 cup sugar
- 2 tbsp. cinnamon
- 2 1/2 tbsp. vegetable oil
- 1/3 cup hot water
- Powdered sugar for dusting
Process:
- Preheat the oven to 375 degrees F and line a baking sheet with some parchment paper. Grease the parchment paper with some unsalted butter or cooking spray.
- Place the apples in a single layer and top with some ground cinnamon. Set aside.
- In a small mixing bowl add in the flour, baking powder and salt. Mix well and set aside.
- In a medium sized mixing bowl add in the eggs and sugar. Using a hand held mixer whip the mixture until pale in color and fluffy.
- Gradually start to add in the dry ingredients and mix it in using a spatula.
- Add in the vegetable oil and mix well using your spatula.
- Add in the hot water and again mix well to incorporate.
- Pour the mixture over the apples and smooth out into one layer.
- Bake for 16-18 minutes or until a skewer inserted into the center comes out clean.
- While the cake is still hot, place a clean, lint free kitchen towel over the top and flip the cake so that the apples are now on top. Watch the video for a visual.
- Using your towel and some kitchen mitts, roll the dough towards the apples, making sure to keep it as tight as you can and without rolling the towel into the roll. Again watch the video for a visual.
- Keep the towel around the cake until fully cooled so that the roll stays together.
- Top with powdered sugar, slice and ENJOY!
