Apple Cookies

Prep time: 15 minutes

Cook time: 20-25 minutes

Materials:

  • 2 small/ medium apples cubed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 1/4 cup flour sifted
  • 1 tbsp. baking powder sifted
  • 1 cup sugar
  • 1/2 cup unsalted butter melted and cooled
  • 2 eggs at room temperature
  • Pinch of salt
  • Powdered sugar for dusting

Process:

  1. Preheat the oven to 355 degrees F and line a baking sheet with some parchment paper. Set aside.
  2. Cut up your apples and mix with cinnamon and nutmeg. Once apples are coated set them aside.
  3. In a medium sized mixing bowl combine the flour, baking powder and salt. Mix and set aside.
  4. In a separate mixing bowl add in the eggs and sugar. Using a whisk mix to break up the eggs and combine the eggs with the sugar.
  5. Add in the melted butter and mix well to combine.
  6. Gradually add in the flour mixture and mix using a spatula (dough will be tough so do not panic).
  7. Fold in the apples.
  8. Taking a small ice cream scoop or a tbsp. spoon start to scoop the cookie dough onto the pan. You want the cookies to about as big as a ping pong ball.
  9. Using your palm slightly press on the cookies to flatten them.
  10. Bake the cookies for 20-25 minutes or until fully cooked through and edges are golden brown.
  11. Cool completely and sprinkle with some powdered sugar.
