Prep time: 15 minutes
Cook time: 20-25 minutes
Materials:
- 2 small/ medium apples cubed
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 1/4 cup flour sifted
- 1 tbsp. baking powder sifted
- 1 cup sugar
- 1/2 cup unsalted butter melted and cooled
- 2 eggs at room temperature
- Pinch of salt
- Powdered sugar for dusting
Process:
- Preheat the oven to 355 degrees F and line a baking sheet with some parchment paper. Set aside.
- Cut up your apples and mix with cinnamon and nutmeg. Once apples are coated set them aside.
- In a medium sized mixing bowl combine the flour, baking powder and salt. Mix and set aside.
- In a separate mixing bowl add in the eggs and sugar. Using a whisk mix to break up the eggs and combine the eggs with the sugar.
- Add in the melted butter and mix well to combine.
- Gradually add in the flour mixture and mix using a spatula (dough will be tough so do not panic).
- Fold in the apples.
- Taking a small ice cream scoop or a tbsp. spoon start to scoop the cookie dough onto the pan. You want the cookies to about as big as a ping pong ball.
- Using your palm slightly press on the cookies to flatten them.
- Bake the cookies for 20-25 minutes or until fully cooked through and edges are golden brown.
- Cool completely and sprinkle with some powdered sugar.
