Prep time: 10 minutes
Cook time: 15-20 minutes
Materials:
- 8-10 corn tortillas cut into 6 pieces each
- 1 lb. ground meat of your choice
- 1 taco seasoning packet (most call for water so add that when instructed)
- 1 tbsp. unsalted butter
- 1 tbsp. flour
- 1 cup whole milk
- 1 cup sharp cheddar cheese shredded
- Vegetable oil for frying
- 1 tbsp. olive oil
- Salt to taste
Chip Process:
- Fill the bottom of a skillet with some vegetable oil, you want it to cover about 1 inch of the bottom.
- Keeping the heat on medium let the oil heat up.
- Once the oil is hot add in a few of the tortilla chips into the pan at a time. Cook for about 20-30 seconds on each side (these cook quickly so keep an eye on them).
- Remove cooked chips onto a paper towel lined plate to catch any excess oil.
- Salt the chips right after and continue to cook the remaining chips.
Meat Process:
- Add the olive oil into a medium sized skillet.
- Keeping the heat on medium, add in the ground meat and cook until no longer pink.
- Follow the instructions on the taco seasoning packet to finish the meat off.
- Set aside.
Cheese Process:
- Into a small saucepan add in the unsalted butter.
- Keeping the heat on medium high let the butter melt.
- Once butter has fully melted add in the flour. Cook for 60-90 seconds stirring constantly to assure cheese doesn’t taste like glue.
- Add in the milk and stir often until the mixture has thickened.
- Shut the heat off and add in the shredded cheese. Season with salt and mix until cheese is dissolved and mixture is smooth.
Time to assemble:
- Place a layer of chips on a platter or plate.
- Top with the cooked taco meat.
- Finally finish off with a generous amount of cheese.
- Serve and ENJOY!
