Prep time: 15-20 minutes
Cook time: 55-60 minutes
Materials:
- 2 lbs. strawberries (fresh cubed or frozen)
- 1/4 cup sugar
- Juice of 1/2 lemon
- 1 loaf of brioche bread cubed
- 2 cups whole milk
- 1/2 cup heavy cream
- 2 eggs
- Splash of vanilla
- 1/4 cup honey (you can also use maple syrup)
- Pinch of salt
- Cooking spray
Process:
- To a sauce pan add in the strawberries, sugar and lemon juice.
- Keeping the heat on medium/ high cook stirring often until strawberries cook down and the juices release (about 5-6 minutes).
- Remove from heat and let cool.
- Preheat the oven to 375 degrees F and grease a casserole dish with some unsalted butter or cooking spray.
- In a mixing bowl add in the milk, heavy cream, eggs, vanilla, honey and salt. Mix well.
- Place half of the brioche bread in the casserole dish.
- Top with the strawberry mixture and then cover with the remaining brioche.
- Pour the milk mixture over the top and let it soak into the bread.
- Cover the bake with aluminum foil and bake covered for 30 minutes and then uncover and cook for an additional 10-15 minutes. Let sit for a few minutes before cutting and serving.
