Strawberry Brioche Breakfast Bake

Prep time: 15-20 minutes

Cook time: 55-60 minutes

Materials:

  • 2 lbs. strawberries (fresh cubed or frozen)
  • 1/4 cup sugar
  • Juice of 1/2 lemon
  • 1 loaf of brioche bread cubed
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 2 eggs
  • Splash of vanilla
  • 1/4 cup honey (you can also use maple syrup)
  • Pinch of salt
  • Cooking spray

Process:

  1. To a sauce pan add in the strawberries, sugar and lemon juice.
  2. Keeping the heat on medium/ high cook stirring often until strawberries cook down and the juices release (about 5-6 minutes).
  3. Remove from heat and let cool.
  4. Preheat the oven to 375 degrees F and grease a casserole dish with some unsalted butter or cooking spray.
  5. In a mixing bowl add in the milk, heavy cream, eggs, vanilla, honey and salt. Mix well.
  6. Place half of the brioche bread in the casserole dish.
  7. Top with the strawberry mixture and then cover with the remaining brioche.
  8. Pour the milk mixture over the top and let it soak into the bread.
  9. Cover the bake with aluminum foil and bake covered for 30 minutes and then uncover and cook for an additional 10-15 minutes. Let sit for a few minutes before cutting and serving.
