Shrimp Pad See Ew

Prep time: 15 minutes

Cook time: 15-20 minutes

Materials:

  • 1 lb. shrimp
  • 2 eggs
  • 4 garlic cloves diced
  • Chinese broccoli chopped
  • 1 lb fresh rice noodles (wide)
  • 2  tbsp sugar
  • 2 tbsp oyster sauce
  • 1 1/2 tbsp soy sauce
  • 1  ½ fish sauce
  • 2 tsp dark soy sauce
  • Vegetable oil
  • Salt and pepper to taste

Process:

  1. Separate your noodles so that they won’t stick to each other once added to the hot pan. Leave them to the side. 
  2. In a small mixing bowl combine the shrimp, vegetable oil, salt and pepper. Mix well and set aside for a few minutes.
  3. In a separate small mixing bowl combine the sugar, oyster sauce, soy sauce, dark soy sauce, fish sauce and pepper. Mix well and set aside.
  4. Place your skillet with high sides (or wok) and place it over medium/ high heat. Once the skillet heats up add in the seasoned shrimp. Cook 3-4 minutes on each side. Remove onto a clean plate and use the same skillet to continue to cook everything else.
  5. If needed add in an additional 2 tbsp vegetable oil. Add in the garlic and cook until fragrant (about 60 seconds) stirring often. 
  6. Push the garlic over to one side and then add in the eggs. Cook your eggs for 1-2 minutes and then add in the broccoli. Cook for an additional minute combining everything together. 
  7. Add in the rice noodles and try to spread them out all over your pan. Let them cook for about 60 seconds without touching them. 
  8. Add in the sauce and mix everything together. Cook for 1-2 minutes, remove from heat, plate and ENJOY!

Additional Note:

Remove the noodles from your fridge 20-30 minutes prior to cooking. You want the noodles to be at room temperature to avoid clumping together. If you don’t have enough time or your noodles are still cold and sticking together, run them under some hot water for about 30-60 seconds. Then carefully separate the noodles.
