Pistachio Ice Cream

Rest time: 12 hours

Materials:

  • 2 cups heavy whipping cream
  • 1/2 cup sweetened condensed milk
  • 1 package instant pistachio pudding (3.4 oz)
  • 2 cups whole milk
  • Peeled pistachios for garnish (optional)

Process:

  1. In a medium sized mixing bowl combine the whole milk and pistachio pudding mix. Mix until pudding thickens and set aside.
  2. In a separate bowl add in the heavy whipping cream.
  3. Using a hand held mixer, mix until soft peaks appear.
  4. Add in the sweetened condensed milk and mix until stiff peaks appear.
  5. Fold in the pistachio pudding mix.
  6. Transfer the mixture into a freezer safe container and leave in freezer to set (at least 12 hours).
  7. Leave out for 5-10 minutes before serving so ice cream will be easy to scoop.
  8. Garnish with peeled pistachios and ENJOY!
