Samoa Inspired Brownies

Prep time: 10 minutes

Cook time: Varies depending on brownie mix

Materials:

  • 1 box brownie mix (along with all the ingredients listed on box to make brownies)
  • 1 can sweetened condensed milk
  • 2 cups unsweetened coconut flakes
  • 1 large or 2 small Hershey chocolate bars

Caramel Process:

  • To make the caramel from sweetened condensed milk you will need to boil the can. Start by removing the paper label from the can. Place into a pot large enough to completely submerge the can. Cover with cold water and bring to a boil. Turn down to a simmer and cook for 90 minutes. While cooking make sure the can is always covered with water. If at any point the water cooks out and the can becomes visible add in additional water. After 90 minutes remove the can from the water and set aside to cool COMPLETELY!! Do not open while hot.

Process:

  1. Make the brownies according to package instructions. Set aside to cool completely.
  2. In a skillet (dry with no oil) add in the unsweetened coconut flakes. Keeping the heat on medium let the coconut flakes brown slightly, making sure to be pushing them around the pan the entire time.
  3. Add the toasted coconut to a mixing bowl and add in the cooked sweetened condensed milk. Mix well.
  4. Spread the mixture over the cooled brownies evenly.
  5. In a separate microwave safe mixing bowl add in the chocolate.
  6. Microwave at 30 second increments making sure to stir after each 30 seconds, until melted.
  7. Drizzle the chocolate over the brownies and set aside so that the brownies and the toppings can set.
  8. Cut, plate and ENJOY!
