Apple/ Pumpkin Muffins

Prep time: 15-20 minutes

Cook time: 20-22 minutes

Streusel Materials:

  • 3 tbsp. flour
  • 3 tbsp. brown sugar
  • Pinch of salt
  • 2 tbsp. cold unsalted butter

Muffin Materials:

  • 1 1/2 cups flour (additional 1 tbsp. needed for apples)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs at room temperature
  • 1/2 cup neutral oil such as vegetable oil
  • 1 tbsp. vanilla extract
  • 1 1/2 tbsp. sour cream at room temperature
  • 1 cup pure pumpkin purée
  • 1 apple chopped into small cubes

Streusel Process:

  1. In a small mixing bowl combine the above streusel materials.
  2. Using a pastry cutter or back of a fork start to cut the butter into the dry ingredients. Once the mixture starts to resemble small pearls place it in the fridge.

Muffin Process:

  1. Preheat the oven 375 degrees F and line a muffin tin with 12 liners.
  2. Cut the apple into small cubes and top with 1 tbsp. of flour. Mix well to coat all the apples and set aside.
  3. In a medium sized mixing bowl add in the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice. Mix well to combine and set aside.
  4. In a separate mixing bowl combine the brown sugar, granulated sugar, eggs, vanilla extract, oil, sour cream and pumpkin puree. Mix using a hand held whisk until everything is incorporated.
  5. Add in the dry ingredients and mix. If you need to switch to a spatula to combine everything please do so.
  6. One all the flour is incorporated add in the apples and fold them into the batter.
  7. Using a large ice cream scoop, scoop the dough into the prepared muffin liners.
  8. Top with your refrigerated topping and bake for 20-22 minutes or until a skewer inserted into the center of the muffin comes out clean.
  9. Let cool completely and ENJOY!
