Streusel Materials:
- 3 tbsp. flour
- 3 tbsp. brown sugar
- Pinch of salt
- 2 tbsp. cold unsalted butter
Muffin Materials:
- 1 1/2 cups flour (additional 1 tbsp. needed for apples)
- 1 tsp baking powder
- 1/2 tsp baking soda
- Pinch of salt
- 1 tsp cinnamon
- 1/4 tsp pumpkin pie spice
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs at room temperature
- 1/2 cup neutral oil such as vegetable oil
- 1 tbsp. vanilla extract
- 1 1/2 tbsp. sour cream at room temperature
- 1 cup pure pumpkin purée
- 1 apple chopped into small cubes
Streusel Process:
- In a small mixing bowl combine the above streusel materials.
- Using a pastry cutter or back of a fork start to cut the butter into the dry ingredients. Once the mixture starts to resemble small pearls place it in the fridge.
Muffin Process:
- Preheat the oven 375 degrees F and line a muffin tin with 12 liners.
- Cut the apple into small cubes and top with 1 tbsp. of flour. Mix well to coat all the apples and set aside.
- In a medium sized mixing bowl add in the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice. Mix well to combine and set aside.
- In a separate mixing bowl combine the brown sugar, granulated sugar, eggs, vanilla extract, oil, sour cream and pumpkin puree. Mix using a hand held whisk until everything is incorporated.
- Add in the dry ingredients and mix. If you need to switch to a spatula to combine everything please do so.
- One all the flour is incorporated add in the apples and fold them into the batter.
- Using a large ice cream scoop, scoop the dough into the prepared muffin liners.
- Top with your refrigerated topping and bake for 20-22 minutes or until a skewer inserted into the center of the muffin comes out clean.
