Cook time: 6-8 hours
Materials:
- 3-4 lb. pot roast
- 2 Rosemary sprigs
- 3 tbsp. unsalted butter
- 1 cup beef or vegetable stock
- 1 large onion sliced into half moons
- 1/4 cup brown sugar
- 2 tbsp. garlic powder
- 1 tbsp. onion powder
- 2 tsp oregano
- 1/2 tsp marjoram
- 2 tsp parsley
- 1 tsp thyme
- Salt and pepper to taste
Process:
- Place your sliced onions at the bottom of your slow cooker insert.
- In a small mixing bowl combine brown sugar, garlic powder, onion powder, oregano, marjoram, parsley, thyme, salt and pepper. Mix well.
- Massage the rub into your pot roast making sure to cover all the surface area with the rub and place the pot roast over the onions.
- Top with the unsalted butter, fresh rosemary and stock.
- Place into the slow cooker and cook for 6-8 hours.
- When ready to serve place over your favorite salad, pasta or potatoes.
