Slow Cooked Pot Roast

Prep time: 15 minutes

Cook time: 6-8 hours

Materials:

  • 3-4 lb. pot roast
  • 2 Rosemary sprigs
  • 3 tbsp. unsalted butter
  • 1 cup beef or vegetable stock
  • 1 large onion sliced into half moons
  • 1/4 cup brown sugar
  • 2 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 2 tsp oregano
  • 1/2 tsp marjoram
  • 2 tsp parsley
  • 1 tsp thyme
  • Salt and pepper to taste

Process:

  1. Place your sliced onions at the bottom of your slow cooker insert.
  2. In a small mixing bowl combine brown sugar, garlic powder, onion powder, oregano, marjoram, parsley, thyme, salt and pepper. Mix well.
  3. Massage the rub into your pot roast making sure to cover all the surface area with the rub and place the pot roast over the onions.
  4. Top with the unsalted butter, fresh rosemary and stock.
  5. Place into the slow cooker and cook for 6-8 hours.
  6. When ready to serve place over your favorite salad, pasta or potatoes.
