Prep time: 15 minutes
Cook time: 9-11 minutes
Materials:
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 1 cup unsalted butter softened
- 2 large eggs
- 1 tbsp. vanilla extract
- 3/4 cup dark brown sugar
- 1 1/2 cups chocolate chips of your choice (I do half semi-sweet and milk chocolate)
Process:
- In a small mixing bowl combine the flour, baking powder, baking soda and salt. Mix well and set aside.
- In a medium mixing bowl add in the softened butter and brown sugar. Mix well using a hand held whisk.
- Add in one egg at a time mixing well after each egg.
- Add in the vanilla extract and mix.
- Slowly start to add in the dry ingredients (you can switch to a spatula if you need to).
- Once everything is incorporated fold in the chocolate chip cookies.
- Cover and refrigerate for a minimum of 1 hour.
- Preheat the oven to 375 degrees and line a baking sheet with some parchment paper.
- Scoop a small ice cream scoop of dough onto each baking sheet spreading them apart about 1.5 inches.
- Using the palm of your hand flatten the dough slightly.
- Bake 9-11 minutes until golden around the edges.
- Let them cool completely on a wire rack and ENJOY!
