Chewy Chocolate Chip Cookies

Prep time: 15 minutes

Cook time: 9-11 minutes

Materials:

  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • Pinch of salt
  • 1 cup unsalted butter softened
  • 2 large eggs
  • 1 tbsp. vanilla extract
  • 3/4 cup dark brown sugar
  • 1 1/2 cups chocolate chips of your choice (I do half semi-sweet and milk chocolate)

Process:

  1. In a small mixing bowl combine the flour, baking powder, baking soda and salt. Mix well and set aside.
  2. In a medium mixing bowl add in the softened butter and brown sugar. Mix well using a hand held whisk.
  3. Add in one egg at a time mixing well after each egg.
  4. Add in the vanilla extract and mix.
  5. Slowly start to add in the dry ingredients (you can switch to a spatula if you need to).
  6. Once everything is incorporated fold in the chocolate chip cookies.
  7. Cover and refrigerate for a minimum of 1 hour.
  8. Preheat the oven to 375 degrees and line a baking sheet with some parchment paper.
  9. Scoop a small ice cream scoop of dough onto each baking sheet spreading them apart about 1.5 inches.
  10. Using the palm of your hand flatten the dough slightly.
  11. Bake 9-11 minutes until golden around the edges.
  12. Let them cool completely on a wire rack and ENJOY!
