Homemade Cinnamon Rolls

Dough Materials:

  • 1 cup warm whole milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup plus 1 tsp granulated sugar
  • 2 3/4 cup flour (plus additional for dusting)
  • Pinch of salt
  • 4 tbsp. unsalted butter
  • 1 egg yolk
  • 1 tbsp. vanilla extract

Filling Materials:

  • 6 tbsp. unsalted butter softened
  • 1 cup granulated sugar
  • 2 tbsp. cinnamon

Glaze Materials:

  • 2 cups powdered sugar
  • 3-4 tbsp. heavy cream

Process:

  1. Into a cup of warm milk add in the dry yeast and 1 tsp sugar. Mix slightly and set aside to activate.
  2. Into the bowl of a standing mixer add in the flour, salt and remaining 1/4 cup of sugar. Give it a rough mix.
  3. Add in the activated yeast and using a dough hook attachment start to mix on low.
  4. Add in the unsalted butter, egg yolk and vanilla extract. Mix on low for 4-5 minutes until everything is combined and the dough starts to attach to the dough hook. The dough should be tacky but if it is not sticking together add in 1-2 tbsp. of flour.
  5. Remove dough onto a lightly floured surface and knead to pull it together.
  6. Grease a bowl with some neutral oil and place the dough into the bowl. Flip it once or twice to coat in oil.
  7. Cover and let rest in a warm place for 60-70 minutes or until doubled in size.
  8. In a small mixing bowl combine the 1 cup granulated sugar and 2 tbsp. of cinnamon. Set aside until ready to use.
  9. Once dough has risen remove it onto a lightly floured surface. Using a rolling pin, also lightly covered in flour, roll the dough out to a rectangle about 12 inch long by 14 inch wide.
  10. Spread the 6 tbsp. of softened flour over the surface.
  11. Top with the cinnamon sugar mixture.
  12. Starting at the top of the dough start to roll the dough towards you to make a log (watch video for visual).
  13. Separate into 8 equal (or as equal as you can get them) pieces and place on a lightly buttered pan. I like to use a 13 x 9 inch pan for this but use whatever you have on hand.
  14. Cover and set aside to rise for another 30- 40 minutes.
  15. Preheat the oven to 325 degrees F and bake for 30-35 minutes.
  16. Let cool slight and then cover with glaze (combined powdered sugar with heavy cream).
  17. Plate and ENJOY!
