Banana Pumpkin Bread

Prep time: 15 minutes

Cook time: 50-60 minutes

Materials:

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 ripe bananas
  • 1 cup pumpkin puree
  • 1/2 cup melted and cooled butter
  • 1 tbsp. Vanilla extract
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup semi-sweet chocolate chips
  • Powdered sugar for dusting (optional)

Process:

  1. Preheat the oven to 350 degrees F and line a loaf pan with some greased parchment paper. Set aside.
  2. In a medium sized mixing bowl combine the flour, baking soda, salt, cinnamon and nutmeg. Mix roughly and set aside.
  3. In a separate bowl add in the bananas and using the back of a fork start to mash until smooth.
  4. Add in the pumpkin puree, vanilla, butter and both types of sugar. Using a hand held whisk mix until everything is incorporated.
  5. Add dry to wet and mix to combine.
  6. Fold in the chocolate chips and pour the batter into the prepared pan.
  7. Bake for 50-60 minutes or until fully cooked through.
  8. Let cool, top with powdered sugar and ENJOY!
