Cook time: 50-60 minutes
Materials:
- 1 1/2 cups flour
- 1 tsp baking soda
- Pinch of salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 ripe bananas
- 1 cup pumpkin puree
- 1/2 cup melted and cooled butter
- 1 tbsp. Vanilla extract
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1 cup semi-sweet chocolate chips
- Powdered sugar for dusting (optional)
Process:
- Preheat the oven to 350 degrees F and line a loaf pan with some greased parchment paper. Set aside.
- In a medium sized mixing bowl combine the flour, baking soda, salt, cinnamon and nutmeg. Mix roughly and set aside.
- In a separate bowl add in the bananas and using the back of a fork start to mash until smooth.
- Add in the pumpkin puree, vanilla, butter and both types of sugar. Using a hand held whisk mix until everything is incorporated.
- Add dry to wet and mix to combine.
- Fold in the chocolate chips and pour the batter into the prepared pan.
- Bake for 50-60 minutes or until fully cooked through.
- Let cool, top with powdered sugar and ENJOY!
