Orange/ Cranberry Muffins

Prep time: 15 minutes

Cook time: 20-25 minutes

Materials:

  • 2 cups flour sifted
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • Pinch of salt
  • 1 cup granulated sugar
  • Zest of 1 orange
  • 1/4 cup orange juice
  • 1/2 cup whole milk
  • 1/2 cup neutral oil
  • 2 large eggs
  • 1 tbsp. vanilla extract
  • 1 cup fresh or frozen cranberries
  • 1/2 cup powdered sugar
  • 2 tbsp. heavy cream

Process:

  1. Preheat the oven to 400 degrees F and line a baking sheet with some cupcake liners. Set aside.
  2. In a mixing bowl combine the flour, salt, baking powder and cinnamon. Mix well and set aside.
  3. In a separate bowl add in the granulated sugar, eggs, orange juice, milk and oil. Mix well to combine.
  4. Add in the dry ingredients and mix well to combine.
  5. Add in the zest of 1 orange and mix well.
  6. Finally fold in the cranberries.
  7. Fill the cupcake liners evenly and bake for 20-25 minutes and let the cupcakes cool completely.
  8. In a small mixing bowl combine the powdered sugar and heavy cream. Mix well and drizzle over the cooled muffins.
  9. Plate and ENJOY!
