Materials:
- 2 cups flour sifted
- 2 tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
- 1 cup granulated sugar
- Zest of 1 orange
- 1/4 cup orange juice
- 1/2 cup whole milk
- 1/2 cup neutral oil
- 2 large eggs
- 1 tbsp. vanilla extract
- 1 cup fresh or frozen cranberries
- 1/2 cup powdered sugar
- 2 tbsp. heavy cream
Process:
- Preheat the oven to 400 degrees F and line a baking sheet with some cupcake liners. Set aside.
- In a mixing bowl combine the flour, salt, baking powder and cinnamon. Mix well and set aside.
- In a separate bowl add in the granulated sugar, eggs, orange juice, milk and oil. Mix well to combine.
- Add in the dry ingredients and mix well to combine.
- Add in the zest of 1 orange and mix well.
- Finally fold in the cranberries.
- Fill the cupcake liners evenly and bake for 20-25 minutes and let the cupcakes cool completely.
- In a small mixing bowl combine the powdered sugar and heavy cream. Mix well and drizzle over the cooled muffins.
- Plate and ENJOY!
