Struffoli

Prep time: 45-60 minutes

Cook time: 2-3 minutes per batch

Materials:

  • 2 cups flour (additional needed for dusting)
  • 1/4 tsp baking powder
  • Pinch of salt
  • 3 tbsp. sugar
  • 2 tbsp. unsalted butter (softened at room temperature)
  • 3 large eggs
  • 1 tbsp. vanilla extract
  • Zest of 1 lemon
  • Zest of 1 small orange
  • 1 tsp orange juice
  • 2/3 cups honey
  • Sprinkles
  • 2-3 cups neutral oil

Process:

  1. In a bowl of a standing mixer add in the flour, baking powder, salt, sugar, lemon zest and orange zest. Mix well.
  2. Add in the unsalted butter, eggs, vanilla and orange juice. Mix using a dough hook attachment until the dough has come together.
  3. Remove from the bowl and place on a lightly floured surface and pull the dough together into a disc using your hands.
  4. Cover with some plastic wrap and refrigerate for 30 minutes.
  5. Take the dough out and separate into 8 equal pieces.
  6. Taking one piece at a time roll out like a string about 14-16 inches long.
  7. Cut each strand into 16-18 pieces.
  8. Take each little piece and roll into a ball. Place on a lightly floured baking sheet lined with some parchment paper.
  9. Continue to do this until all the dough is rolled out.
  10. In a medium sized sauce pan add in the oil.
  11. Let the oil heat up and then lower the heat to medium.
  12. Working in batches add in the dough balls cooking for 2-3 minutes or until the balls are golden brown.
  13. Remove using a slotted spoon and place on a paper towel lined plate. Once done place in a large mixing bowl.
  14. In a small sauce pan add in the honey and heat up on low heat until runny.
  15. Pour over the fried balls and place on a plate or platter.
  16. Sprinkle with your favorite sprinkles and ENJOY!
