Chocolate Chip Oatmeal Bars

Prep time: 15-20 minutes

Cook time: 20-22 minutes

Materials:

  • 3 cups old fashioned oats
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 cup unsalted butter softened at room temperature
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tbsp. vanilla extract
  • 1 cup butterscotch chips
  • 1 cup milk chocolate chips
  • Powdered sugar for dusting (optional)

Process:

  1. Preheat the oven to 350 degrees F and line a medium sized baking sheet with some parchment paper and non stick cooking spray. Set aside.
  2. In a medium sized mixing bowl combine the old fashioned oats, flour, baking soda, cinnamon and salt. Mix roughly and set aside.
  3. In another mixing bowl add in the unsalted butter along with the brown sugar and granulated sugar. Using a hand held mixer mix whip the mixture until fluffy.
  4. Add in the eggs, one at a time, and then a splash of vanilla. Mix well.
  5. Add in the dry ingredients and mix just long enough to incorporate all the ingredients.
  6. Using a spatula scrape the sides and bottom of the bowl making sure the flour was fully incorporated.
  7. Fold in both types of chocolate chips.
  8. Pour the mixture into your prepared baking sheet and even out as best you can.
  9. Bake for 20-22 minutes or until edges are golden and when toothpick inserted into the center of the bake comes out clean.
  10. Let cool completely, cut into cubes, plate, top with powdered sugar and ENJOY!
