Materials:
- 3 cups old fashioned oats
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
- 1 cup unsalted butter softened at room temperature
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tbsp. vanilla extract
- 1 cup butterscotch chips
- 1 cup milk chocolate chips
- Powdered sugar for dusting (optional)
Process:
- Preheat the oven to 350 degrees F and line a medium sized baking sheet with some parchment paper and non stick cooking spray. Set aside.
- In a medium sized mixing bowl combine the old fashioned oats, flour, baking soda, cinnamon and salt. Mix roughly and set aside.
- In another mixing bowl add in the unsalted butter along with the brown sugar and granulated sugar. Using a hand held mixer mix whip the mixture until fluffy.
- Add in the eggs, one at a time, and then a splash of vanilla. Mix well.
- Add in the dry ingredients and mix just long enough to incorporate all the ingredients.
- Using a spatula scrape the sides and bottom of the bowl making sure the flour was fully incorporated.
- Fold in both types of chocolate chips.
- Pour the mixture into your prepared baking sheet and even out as best you can.
- Bake for 20-22 minutes or until edges are golden and when toothpick inserted into the center of the bake comes out clean.
- Let cool completely, cut into cubes, plate, top with powdered sugar and ENJOY!
