Prep time: 15-20 minutes
Cook time: 45-50 minutes
Materials:
- 1 box large shells (cooked according to box instructions)
- Mozzarella & Parmesan cheese to taste (for top)
Meat Sauce Materials:
- 1 1/2 lb ground beef
- 1/2 onion chopped
- 2 tbsp. olive oil
- 28 oz. crushed tomatoes
- Salt and pepper to taste
- 1 tbsp. sugar
- 1 tbsp. oregano
- 1 tbsp. marjoram
- 1 tbsp. garlic powder
- 1 tsp onion powder
Filling Materials:
- 1/2 onion chopped
- 3 garlic cloves minced
- 1 cup spinach chopped
- 32 oz. whole milk ricotta cheese
- 1 egg
- 1/4 cup Parmesan cheese
- 1 tsp oregano
- 1 tsp marjoram
- 1 tsp garlic powder
- Salt & pepper to taste
Process:
- Cook the pasta shells according to instructions. Drain and set aside.
- In a large skillet add in the olive oil and onion. Cook over medium/ high heat stirring often until onions become translucent.
- Add in the ground beef and cook breaking the beef up with a wooden spoon until the ground beef is fully cooked through.
- Drain any excess fat rendered by the beef.
- Season with salt and pepper and add in the crushed tomatoes.
- Add in the sugar, oregano, marjoram, garlic powder, onion powder and salt and pepper if needed. Mix well.
- Cook for 8-10 minutes stirring often and set aside.
- In a medium sized mixing bowl combine all the filling materials.
- Preheat the oven to 400 degrees F.
- In a large casserole dish spread a layer of meat sauce on the bottom of the pan.
- Taking one shell at a time add in a scoop of the ricotta cheese filling. Place the shell into the casserole dish and continue the same process until all the shells are stuffed.
- Top the shells with the meat sauce generously.
- Top with mozzarella and parmesan cheese to taste.
- Bake for 20-25 minutes.
- Plate and ENJOY!
