Strawberry Poke Cake

Prep time: 20 minutes

Cook time: Depends on brand of box cake

Materials:

  • 1 white cake box mix (plus all ingredients listed on box)
  • 2 strawberry jello packets (each 3oz)
  • 2 cups how water
  • 1 cup cold water
  • 2 cups heavy whipping cream
  • 2 tbsp. powdered sugar
  • 8-10 fresh strawberries (optional)

Process:

  1. Bake the cake (about 13″ by 9″) according to box instructions and set aside to cool.
  2. Dissolve one packet of jello in 1 cup hot water. Once dissolved add in 1 cup of cold water.
  3. Taking the end of a wooden spoon make holes all over your cake.
  4. Pour the jello all over the cake, especially concentrating on the areas with holes.
  5. Place in the fridge to set while you prep the whipped topping.
  6. Dissolve the remaining jello packet in 1 cup hot water. Set aside to cool.
  7. In a medium sized mixing bowl add in the heavy whipping cream and powdered sugar.
  8. Using a hand held whisk, whip until soft peaks start to form.
  9. Gradually start to pour in your cooled jello and mix. Mix until stiff peaks start to appear, and not a second longer.
  10. Pour the mixture over the cake and top with fresh strawberries.
  11. Place in the fridge for several hours to set.
  12. Cut, plate, serve and ENJOY!
