Prep time: 20-30 minutes
Cook time: 14-16 minutes
Materials:
- 1 1/3 cups flour sifted
- 1 tbsp. baking powder sifted
- Pinch of salt
- 5 eggs at room temperature
- 1 cup granulated sugar
- 2 1/2 tbsp. vegetable oil
- 1/3 cup hot water
- 1 cup heavy whipping cream
- 1/4-1/2 cup powdered sugar
- 1/2 cup chopped strawberries (additional needed for topping)
Process:
- Preheat the oven to 375 degrees F and line a baking sheet with some parchment paper. Grease the parchment paper with some unsalted butter or cooking spray and set aside.
- In a small mixing bowl add in the flour, baking powder and salt. Mix well and set aside.
- In a medium sized mixing bowl add in the eggs and sugar. Using a hand held mixer whip the mixture until pale in color and fluffy.
- Gradually start to add in the dry ingredients and mix just until the flour is incorporated..
- Add in the vegetable oil and mix to combine.
- Add in the hot water and again mix well to incorporate.
- Pour the mixture in your prepared baking sheet and smooth out into one layer.
- Bake for 14-16 minutes or until a skewer inserted into the center comes out clean.
- While the cake is still hot, place a clean, lint free kitchen towel over the top and flip the cake so that the bottom is now the top. Watch the video for a visual.
- Using your towel and some kitchen mitts, roll the dough away from you, making sure to keep it as tight as you can and without rolling the towel into the roll. Again watch the video for a visual.
- Keep the towel around the cake until fully cooled so that the roll stays together.
- In a medium sized mixing bowl add in the the heavy cream and powdered sugar. Mix until still peaks appear.
- Fold in the strawberries.
- Carefully unroll your cake and place about 3/4 of your mixture inside smoothing it out the best you can.
- Roll it the same direction the cake was rolled before.
- Top the roll with the remaining heavy whipped cream and additional strawberries if desired.
- Refrigerate for several hours so that the cake sets.
- When ready to serve, cut into slices, plate and ENJOY!
