Prep time: 20-30 minutes
Cook time: 8-10 minutes
Shrimp Materials:
- 1 lb. shrimp
- 2 tbsp. neutral oil
- 2 tbsp. soy sauce
- 2 tbsp. honey
- 1/4 tsp red pepper flakes
- Salt and pepper to taste
Salsa Materials:
- 2 Roma tomatoes chopped
- 1/2 small shallot diced
- 2 tbsp. chopped cilantro diced
- 1/2 jalapeño (add more if you want more heat)
- 1/2 cup grilled zucchini sliced to make grilling easier and then cube for your salsa
- 1/2 cup grilled yellow squash sliced to make grilling easier and then cube for your salsa
- Juice of 1/2 lime
- Salt and pepper to taste
Process:
- In mixing bowl combine the shrimp materials. Cover and marinate for several hours.
- When ready to cook either skewer to cook or place directly on the grill being careful not to loose a shrimp in between the grill grates. Cook 3-4 minutes per side.
- At the same time grill your zucchini and yellow squash for 3-4 minutes per side.
- In a medium mixing bowl combine all the salsa materials and mix well to combine.
- To assemble plate your shrimp and top with your grilled salsa.
- Can be enjoyed warm or cold.
