Grilled Shrimp w/ Grilled Veggie Salsa

Prep time: 20-30 minutes

Cook time: 8-10 minutes

Shrimp Materials:

  • 1 lb. shrimp
  • 2 tbsp. neutral oil
  • 2 tbsp. soy sauce
  • 2 tbsp. honey
  • 1/4 tsp red pepper flakes
  • Salt and pepper to taste

Salsa Materials:

  • 2 Roma tomatoes chopped
  • 1/2 small shallot diced
  • 2 tbsp. chopped cilantro diced
  • 1/2 jalapeño (add more if you want more heat)
  • 1/2 cup grilled zucchini sliced to make grilling easier and then cube for your salsa
  • 1/2 cup grilled yellow squash sliced to make grilling easier and then cube for your salsa
  • Juice of 1/2 lime
  • Salt and pepper to taste

Process:

  1. In mixing bowl combine the shrimp materials. Cover and marinate for several hours.
  2. When ready to cook either skewer to cook or place directly on the grill being careful not to loose a shrimp in between the grill grates. Cook 3-4 minutes per side.
  3. At the same time grill your zucchini and yellow squash for 3-4 minutes per side.
  4. In a medium mixing bowl combine all the salsa materials and mix well to combine.
  5. To assemble plate your shrimp and top with your grilled salsa.
  6. Can be enjoyed warm or cold.
