S’mores Rice Crispy Treats

Prep time: 10 minutes

Cook time: 5-8 minutes

Materials:

  • 1/2 cup unsalted butter
  • 10.5 ounce bag mini marshmallows
  • 2 cups large marshmallows
  • 8 cups Rice Crispy cereal
  • 2 cups Cinnamon Toast Crunch cereal (1 additional cup needed for topping)
  • 3 milk chocolate bars (you can also use semi- sweet)
  • 1 tsp coconut oil

Process:

  1. Line a 9 inch x 13 inch baking pan with some parchment paper and coat with unsalted butter or non stick spray. Set aside.
  2. In a large soup pot over medium/ high heat add in the unsalted butter.
  3. Once butter is melted add in the mini and large marshmallows. Mix constantly until the mini marshmallows are melted and large marshmallow are still somewhat in tact.
  4. Shut the heat off and add in the Rice Crispy Cereal and 2 cups of Cinnamon Toast Crunch cereal. Mix well to coat everything in the marshmallow mixture.
  5. Pour the mixture into your prepared dish and smooth out into one layer.
  6. In a microwave safe bowl combine the chocolate and coconut oil. Microwave in 30 second increments until chocolate is melted.
  7. Drizzle the melted chocolate over the top of the rice crispy treats.
  8. Crush 1 cup of Cinnamon Toast Crunch cereal and pour over the melted chocolate.
  9. Set aside for a few hours to allow the chocolate to set, then cut, plate and ENJOY!
