Materials:
- 2 pieces of corn on the cob
- 2 avocados mashed
- 1 Roma tomato chopped
- 1/2 small onion chopped
- 1 jalapeño pepper diced
- 2 tbsp. chopped cilantro chopped
- Juice of 1/2 lime
- Salt to taste
Process:
- Grill your corn to your liking and set aside to cool.
- In the meantime mash up your avocado and season with salt and pepper. Mix well.
- Add in the tomato, onion, jalapeno and cilantro.
- Safely remove the corn kernels off the cob (watch video for visual) and add them in.
- Drizzle with lime juice and mix well.
- Refrigerate for a few hours and ENJOY with tortilla chips.
