Roasted Corn Guacamole

Materials:

  • 2 pieces of corn on the cob
  • 2 avocados mashed
  • 1 Roma tomato chopped
  • 1/2 small onion chopped
  • 1 jalapeño pepper diced
  • 2 tbsp. chopped cilantro chopped
  • Juice of 1/2 lime
  • Salt to taste

Process:

  1. Grill your corn to your liking and set aside to cool.
  2. In the meantime mash up your avocado and season with salt and pepper. Mix well.
  3. Add in the tomato, onion, jalapeno and cilantro.
  4. Safely remove the corn kernels off the cob (watch video for visual) and add them in.
  5. Drizzle with lime juice and mix well.
  6. Refrigerate for a few hours and ENJOY with tortilla chips.
