Prep time: 15 minutes
Cook time: 12-14 minutes per batch
Materials:
- 1 2/3 cups flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tbsp. cinnamon
- 2 cups old fashioned oats
- 1 cup unsalted butter (softened at room temperature)
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs (at room temperature)
- 1 tbsp. vanilla extract
- 1 cup raisins
Process:
- In a medium sized mixing bowl combine flour, baking soda, salt, cinnamon and old fashioned oats. Mix well and set aside.
- In a separate bowl add in the unsalted butter and both types of sugar. Mix well using a hand held whisk.
- Add in one egg at a time, making sure to mix well after each egg.
- Add in the vanilla and again mix to combine.
- Pour the dry ingredients into wet and mix well to make sure all the dry ingredients are well incorporated.
- Fold in 1 cup of raisins. Cover and refrigerate 60-90 minutes.
- Preheat the oven to 350 degrees F and line a baking sheet with some parchment paper.
- Using a small ice cream scoop, scoop balls of dough onto the baking tray, making sure to leave around 2 inches of space in between each cookie.
- Flatten the dough with your palm slightly.
- Bake 12-14 minutes until golden brown around the edges. The middles should still be slightly giggly.
- Cool on a baking rack, plate and ENJOY!
