Chewy Oatmeal Raisin Cookies

Prep time: 15 minutes

Cook time: 12-14 minutes per batch

Materials:

  • 1 2/3 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp. cinnamon
  • 2 cups old fashioned oats
  • 1 cup unsalted butter (softened at room temperature)
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs (at room temperature)
  • 1 tbsp. vanilla extract
  • 1 cup raisins

Process:

  1. In a medium sized mixing bowl combine flour, baking soda, salt, cinnamon and old fashioned oats. Mix well and set aside.
  2. In a separate bowl add in the unsalted butter and both types of sugar. Mix well using a hand held whisk.
  3. Add in one egg at a time, making sure to mix well after each egg.
  4. Add in the vanilla and again mix to combine.
  5. Pour the dry ingredients into wet and mix well to make sure all the dry ingredients are well incorporated.
  6. Fold in 1 cup of raisins. Cover and refrigerate 60-90 minutes.
  7. Preheat the oven to 350 degrees F and line a baking sheet with some parchment paper.
  8. Using a small ice cream scoop, scoop balls of dough onto the baking tray, making sure to leave around 2 inches of space in between each cookie.
  9. Flatten the dough with your palm slightly.
  10. Bake 12-14 minutes until golden brown around the edges. The middles should still be slightly giggly.
  11. Cool on a baking rack, plate and ENJOY!
