Materials:
- 1 lb. ground turkey
- 5-6 large potatoes (I used Russet) cubed
- 1 onion chopped
- 3-4 garlic cloves minced
- 1 bell pepper or handful mini peppers chopped
- Salt and pepper to taste
- 1 tsp garlic powder
- 2 tbsp. paprika (divided)
- 1 tbsp. oregano
- 1/4 tsp chili powder
- 6-7 tbsp. olive oil (divided)
- 1 cup sharp cheddar cheese
Process:
- In a skillet with high sides, over medium/ high heat add in 2-3 tbsp. of oil.
- Once hot add in the cubed potatoes. Season with salt, pepper, garlic powder and 1 tbsp. paprika. Coat well and cook stirring often until potatoes are fork tender (times will vary depending on how large your potatoes are).
- Once cooked through remove into a clean bowl.
- Into the same skillet add in an additional 2-3 tbsp. of oil and the ground turkey.
- Cook breaking the ground turkey up and stirring often, until turkey is cooked through. If turkey seems too dry add in a few tbsp. of oil.
- If your turkey renders a lot of fat discard it leaving about 2 tbsp. behind.
- Season the meat with salt, pepper, oregano, chili powder and remaining 1 tbsp. paprika. Mix well to coat the ground turkey.
- Add in the onion and cook for 3-4 minutes or until softened.
- Then add in the garlic cloves and bell pepper. Mix well and cook for an additional 3-5 minutes.
- Add the cooked potatoes back in and give the mixture a good stir to incorporate.
- Top with sharp cheddar cheese. Give it a rough mix and remove from heat.
- Plate and ENJOY!
