Cook time: 20-25 minutes
Materials:
- 14 oz stuffing mushrooms
- 1 box store bought stuffing (you can also use leftover homemade stuffing)
- 2 tbsp. fresh parsley chopped
- 1/2 cup mozzarella cheese (plus additional mozzarella cheese for topping)
- 1/4 cup Parmesan cheese (plus additional cheese for topping)
- Salt and pepper to taste
- Drizzle of olive oil
Process:
- Preheat your oven to 400 degrees F and drizzle a baking sheet with some olive oil and set aside.
- Clean off the mushrooms using a damp paper towel and remove the stalk from the mushroom cap.
- Dice up the stalk and place in a medium bowl.
- Add in the parsley, mozzarella and parmesan cheese. Give the mixture a rough mix and set aside.
- Cook the stuffing according to the package instructions.
- Once ready add that to the bowl with the mushroom mixture. Mix well.
- Season with salt and pepper if needed.
- Taking one mushroom at a time stuff the mixture into the mushroom. Stuff desired amount of stuffing into the cap (I need mine to be filled to the brim) and place onto your prepared baking sheet.
- Continue to do this until all your mushrooms are stuffed.
- Drizzle with some olive oil and top with some additional mozzarella and Parmesan cheese.
- Bake for 20-25 minutes.
- Plate and ENJOY!
