Materials:
- 1 1/4 cups old fashioned oats
- 1 1/2 cups flour
- Pinch of salt
- 2 tsp baking powder
- 1 tsp baking soda
- 1/3 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tbsp. vanilla extract
- 3/4 cups whole milk
- 1 cup cranberry sauce (or fresh/ frozen cranberries)
Process:
- Preheat the oven to 380 degrees F and line a muffin tin with some cupcake liners.
- In a mixing bowl combine the old fashioned oats, flour, salt, baking powder and baking soda. Mix and set aside.
- In a separate bowl add in the unsalted butter and both types of sugar. Mix well. Add in the eggs one at a time, mixing well after each egg.
- Add in the vanilla along with the whole milk. Mix well to incorporate.
- Add in the dry ingredients and mix well to combine.
- Fold in the cranberry sauce. If you do not have leftover cranberry sauce, you can add in fresh or frozen strawberries.
- Scoop the batter evenly into the cupcake liners.
- Bake for 20-22 minutes or until a toothpick inserted into the center of the muffin comes out clean.
- Let cool, plate and ENJOY!
