Cranberry Sauce Muffins

Materials:

  • 1 1/4 cups old fashioned oats
  • 1 1/2 cups flour
  • Pinch of salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tbsp. vanilla extract
  • 3/4 cups whole milk
  • 1 cup cranberry sauce (or fresh/ frozen cranberries)

Process:

  1. Preheat the oven to 380 degrees F and line a muffin tin with some cupcake liners.
  2. In a mixing bowl combine the old fashioned oats, flour, salt, baking powder and baking soda. Mix and set aside.
  3. In a separate bowl add in the unsalted butter and both types of sugar. Mix well. Add in the eggs one at a time, mixing well after each egg.
  4. Add in the vanilla along with the whole milk. Mix well to incorporate.
  5. Add in the dry ingredients and mix well to combine.
  6. Fold in the cranberry sauce. If you do not have leftover cranberry sauce, you can add in fresh or frozen strawberries.
  7. Scoop the batter evenly into the cupcake liners.
  8. Bake for 20-22 minutes or until a toothpick inserted into the center of the muffin comes out clean.
  9. Let cool, plate and ENJOY!
