Potato/ Ham/ Cheese Muffins

Prep time: 10-15 minutes

Cook time: 35-45 minutes

Materials:

  • 6-7 potatoes cubed
  • 1 cup ham chopped
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tsp marjoram
  • 1/2 tsp parsley
  • 1 tbsp. paprika
  • 2 tbsp. olive oil

Process:

  1. Preheat the oven to 385 degrees F and line a muffin tin with some cupcake liners.
  2. In a mixing bowl add in the cubed potatoes.
  3. Coat in the oil and season with salt, pepper, marjoram, parsley and paprika. Mix well to coat all the potatoes.
  4. Add in the ham and cheese and mix to combine.
  5. Divide evenly amongst the 12 cupcake liners.
  6. Bake for 35-45 minutes or until potatoes are fully cooked thorugh.
  7. Let cool for 5 minutes before removing.
  8. Plate and ENJOY!
