Roasted Veggies

Prep time: 5 minutes

Cook time: 45 minutes

Materials:

  • 1 large zucchini cubed
  • 1 large sweet potato cubed
  • 1 cup of cauliflower florets
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. Italian seasoning
  • 1/2 tbsp. chili powder
  • 1/4 tsp. cinnamon
  • 2 tbs. of olive oil

Process:

  1. Pre-heat your oven to 380 degrees and line a baking sheet with aluminum foil (this makes the clean-up much easier).
  2. In a large mixing bowl combine all of the ingredients listed above making sure all the veggies are nicely coated with the spices and olive oil.
  3. Lay them out in a single layer on the baking sheet and bake for 20-25 minutes.
  4. After 25 minutes or so, take the baking sheet out and give the veggies a nice toss, before placing them back into the oven for an additional 15-20 minutes, or until the veggies are fully cooked through. (Depending on how big you cut your veggies will vary your cook time. Just be sure to check with a fork to see if the veggies are soft and fully cooked through). Remove from the oven and enjoy!
