Lasagna with meat and veggies

Prep time: 20 minutes

Cook time: 1 hour


  • 1 package of oven ready lasagna
  • 2 cups of pasta sauce
  • 1 cups of ricotta
  • 1 egg
  • 1/4 cup parmesan cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup of diced mushrooms
  • 1/2 cup chopped spinach
  • 1 large carrot diced
  • 1/2 onion diced
  • 2 garlic cloves chopped
  • 1/2 tsp. dried parsley
  • 1/2 tsp. dried oregano
  • salt and pepper to taste
  • 2tbs. of olive oil
  • 1lb. of ground turkey


  1. Pre-heat your oven to 400 degrees.
  2. In a medium sized mixing bowl add in your ricotta, egg, parmesan, mushrooms, spinach, carrots, onion, garlic, parsley, oregano, and salt and pepper. Mix well and set aside.
  3. In a medium sized skillet on medium high heat add in your oil and ground turkey. Cook for 5-8 minutes or until the meat is completely cooked through, breaking the meat apart and stirring frequently.
  4. Now we can assemble out lasagna. In a casserole dish start with a layer of sauce (this helps from sticking as well as against drying the noodles out). Then layer with lasagna noodles, ricotta mixture, lasagna noodles, meat mixture, sauce…. etc. Continue until you are done with the ricotta and meat mixture making sure your last layer is the lasagna noodles.
  5. Put sauce over the top of the lasagna and layer with a coat of shredded mozzarella.
  6. Bake for 1 hour and let rest for 15 minutes before enjoying!
