Prep time: 15-20 minutes
Cook time: 5-6 minutes per batch
Materials:
- 8-10 pieces of pork chops (thinly sliced)
- 1 cup plain bread crumbs
- 1/4 cup flour
- 2 eggs
- 1 tbsp. dried parsley
- Salt and pepper to taste
- Vegetable oil for frying
Process:
- In a medium sized mixing bowl add in 2 eggs, salt and pepper. Mix well to break up the yolks and incorporate the salt and pepper. Set aside.
- In a separate bowl or plate add in the flour, bread crumbs, parsley, salt and pepper. Mix well and set aside.
- Take each cutlet and using a meat mallet pound each piece of cutlet into a thin strip (about 1/4 inch thick).
- Dip each cutlet into the egg mixture and then coat that cutlet in the flour and bread crumb mixture. Continue to do this until all the cutlets are coated.
- In a medium sized skillet add in enough vegetable oil to coat about 1/4 inch of the bottom.
- Keeping the heat on medium/low let the oil heat up.
- Once the oil heats up place 2-3 pieces of pork at a time, cooking for 2-3 minutes on each side.
- Once fully cooked through remove onto a paper towel lined plate.
- Plate and ENJOY!
