Vanilla Breakfast Fritters

Prep time: 15 minutes

Cook time: 3-5 minutes per batch

Materials:

  • 40 g fresh yeast w/ 2 tbsp. sugar & ¼ cup warm milk & 2 tbsp. flour (for yeast starter)
  • 2 cups flour
  • 4 tbsp sugar
  • 1 cup milk (separated into ¼ cup and ¾ cup)
  • 3 eggs
  • Vanilla extract 
  • Pinch of salt
  • Vegetable oil for frying
  • Powdered sugar for dusting

Process:

  1. In a mixing bowl or large measuring cup combine the warm milk, fresh yeast, sugar and flour. Mix well, cover and set aside for a few minutes to allow the yeast to activate.
  2. In a large mixing bowl add in the remaining flour, salt, eggs, vanilla, sugar, and the activated yeast mixture. Mix well, cover with a clean kitchen towel and set aside until the mixture has doubled in size.
  3. In a skillet add in enough vegetable oil to cover the bottom completely.
  4. Leaving the heat on medium let the oil heat up.
  5. Add in 1/2 cup of batter per fritter and cook 2-3 minutes on medium/ low heat, per each side.
  6. Once cooked remove from skillet and place on a paper towel lined plate to soak up any additional oil.
  7. Plate, top with powdered sugar and ENJOY!
