Materials:
- 40 g fresh yeast w/ 2 tbsp. sugar & ¼ cup warm milk & 2 tbsp. flour (for yeast starter)
- 2 cups flour
- 4 tbsp sugar
- 1 cup milk (separated into ¼ cup and ¾ cup)
- 3 eggs
- Vanilla extract
- Pinch of salt
- Vegetable oil for frying
- Powdered sugar for dusting
Process:
- In a mixing bowl or large measuring cup combine the warm milk, fresh yeast, sugar and flour. Mix well, cover and set aside for a few minutes to allow the yeast to activate.
- In a large mixing bowl add in the remaining flour, salt, eggs, vanilla, sugar, and the activated yeast mixture. Mix well, cover with a clean kitchen towel and set aside until the mixture has doubled in size.
- In a skillet add in enough vegetable oil to cover the bottom completely.
- Leaving the heat on medium let the oil heat up.
- Add in 1/2 cup of batter per fritter and cook 2-3 minutes on medium/ low heat, per each side.
- Once cooked remove from skillet and place on a paper towel lined plate to soak up any additional oil.
- Plate, top with powdered sugar and ENJOY!
