Prep time: 15 minutes
Cook time: 10-15 minutes for apple mixture (baking time will vary depending on puff pastry)
Materials:
- 1 sheet puff pastry
- 1 cup pumpkin purée
- 3 apples cubed
- 1 tbsp. unsalted butter
- 1/2 cup sugar separated in half
- 1 tbsp. cinnamon separated in half
- 1/2 tsp nutmeg separated in half
- 1 egg
Process:
- Preheat the oven to instructions on the puff pastry box, and line a baking sheet with some parchment paper. Set aside.
- In a small mixing bowl add in the pumpkin puree, 1/4 cup of sugar, 1/2 tbsp. cinnamon and 1/4 tsp nutmeg. Mix well and set aside.
- In a medium sized skilled add in the unsalted butter.
- Keeping the heat on medium/high let the butter melt. Once melted add in the apples and mix to coat them in the butter.
- Into the pan add in the remainder of the sugar, cinnamon and nutmeg. Mix well and cook 5-10 minutes stirring often, until apples are softened. Set aside.
- Softly flour a clean work surface and roll out your puff pastry. Cut the pastry into 4 equal rectangles (or whichever size and shaped you’d like).
- Place 1/4 of the pumpkin mixture on one side of the puff pastry (watch video for visual) and top the pumpkin with 1/4 of the apple mixture.
- Fold the dough over the pumpkin and apple mixture and seal the edges.
- Place the pastries on the baking sheet.
- Make a slit into the center of each pastry.
- Take an egg and add in 1 tbsp. of cold water. Mix well and taking a pastry brush or your fingers, brush the top and sides of each pastry.
- Sprinkle with some additional sugar (optional) and bake following the instructions on the puff pastry box.
- Let cool and ENJOY!
