Materials:
- 15 oz. Ricotta Cheese
- 8 oz. Mascarpone Cheese
- 1 1/3 cup powder sugar
- 1 tbsp. vanilla extract
- 1 cup mini semi-sweet chocolate chips
Process:
- In a medium sized mixing bowl add in the ricotta cheese and mascarpone cheese. Using a hand held mixer mix until both cheeses are combined together and smooth.
- Add the powdered sugar and continue to mix (start out on low so you don’t get powdered sugar everywhere) until the sugar is incorporated into the cheese and the mixture is smooth and fluffy.
- Add in the vanilla and mix to incorporate.
- Using a spatula fold in the the chocolate chips.
- Plate and enjoy with cannoli shells or any other cookies you’d like.
