Chicken Cutlets (updated recipe)

Prep time: 15 minutes

Cook time: 5-6 minutes per batch

Materials:

  • 1 chicken breast
  • 2 eggs
  • 1/4 cup flour
  • 1 cup breadcrumbs
  • Grated Parmesan cheese to taste
  • Salt and pepper to taste
  • Vegetable oil

Process:

  1. Cut the chicken into thin cutlets (thinness will depend on your preference).
  2. Using a meat mallet pound the cutlet on each side. Again stop when you reach your desired thickness.
  3. In a bowl or mixing dish add in 2 eggs, some grated parmesan cheese, salt and pepper. Mix well and set aside.
  4. In a separate bowl combine the flour, breadcrumbs, parmesan cheese, salt and pepper. Mix well.
  5. Taking one cutlet at a time dip in the egg mixture and then directly into the flour and breadcrumb mixture, making sure to coat both sides.
  6. Add in enough vegetable oil to coat the bottom of a medium sized skillet generously.
  7. Keeping the heat on medium/ low let the oil heat up.
  8. Once hot add in a few cutlets at a time and cook 2-3 minutes on each side, or until cutlets are fully cooked through.
  9. Remove from pan, plate and ENJOY!
