Prep time: 15 minutes
Cook time: 5-6 minutes per batch
Materials:
- 1 chicken breast
- 2 eggs
- 1/4 cup flour
- 1 cup breadcrumbs
- Grated Parmesan cheese to taste
- Salt and pepper to taste
- Vegetable oil
Process:
- Cut the chicken into thin cutlets (thinness will depend on your preference).
- Using a meat mallet pound the cutlet on each side. Again stop when you reach your desired thickness.
- In a bowl or mixing dish add in 2 eggs, some grated parmesan cheese, salt and pepper. Mix well and set aside.
- In a separate bowl combine the flour, breadcrumbs, parmesan cheese, salt and pepper. Mix well.
- Taking one cutlet at a time dip in the egg mixture and then directly into the flour and breadcrumb mixture, making sure to coat both sides.
- Add in enough vegetable oil to coat the bottom of a medium sized skillet generously.
- Keeping the heat on medium/ low let the oil heat up.
- Once hot add in a few cutlets at a time and cook 2-3 minutes on each side, or until cutlets are fully cooked through.
- Remove from pan, plate and ENJOY!
