“Magic” Cake

Prep time: 20 minutes

Cook time: 40-45 minutes

Materials:

  • 4 large eggs at room temperature separated
  • 1/2 cup unsalted butter melted and cooled
  • 2 cups whole milk warmed 
  • 1 cup powdered sugar 
  • 2 tbsp granulated sugar 
  • 1 tbsp. vanilla sugar (or vanilla extract)
  • 2 tbsp. hot water
  • 1 cup flour 
  • Pinch of salt
  • Additional powdered sugar for dusting

Process:

  1. Preheat the oven to 325 degrees F and line a square or round cake pan with some parchment paper and grease with some unsalted butter or cooking spray. 
  2. Into the bowl of your egg whites add in a pinch of salt. Using a hand held mixer whip the egg yolks until soft peaks start to appear. 
  3. Add in the granulated sugar and continue to mix until you start to get stiff peaks. Set aside. 
  4. Into the bowl of your egg yolks add in the powdered sugar. Using the same mixer mix until the mixture is fluffy and pale in color. 
  5. Add in the vanilla sugar (or vanilla extract) and mix to combine. 
  6. Add in the melted butter and hot water. Mix well.
  7. Add in the flour and mix to incorporate. 
  8. Gradually start to add in the milk and mix until fully incorporated.
  9. Start to fold in the egg whites being careful not to deflate the egg whites. 
  10. Pour the mixture into your prepared cake pan and bake for 40-45 minutes.
  11. Let the cake cool completely and dust with powdered sugar.
  12. Cut and ENJOY!
