Prep time: 5-8 minutes
Cook time: 15-20 minutes
Materials:
- 1 box penne pasta
- 1 onion chopped
- 3-4 garlic cloves diced
- 3 tbsp. unsalted butter
- 2 tbsp. olive oil
- 3/4 cup vodka
- 2 cups crushed tomatoes
- 1 1/2 cups heavy cream
- 1/2 cup grated parmesan cheese
- Pinch of red pepper flakes
- Salt and pepper to taste
Process:
- Cook the pasta according to package instructions.
- In a large skillet with high sides add in the unsalted butter and olive oil.
- Keeping the heat on medium/ high let the butter melt.
- Add in the onion and cook until onions are soft and translucent, stirring often.
- Add in the garlic. Cook for about 60 seconds stirring constantly.
- Add in the vodka and let simmer for a few minutes, stirring occasionally.
- Add in the crushed tomatoes and cook for a few minutes.
- Add in the heavy cream and mix well to combine.
- Season with salt, pepper and red pepper flakes. Once incorporated, add in the cooked pasta.
- Mix well and remove from heat.
- Add in the parmesan cheese and mix well to incorporate.
- Plate and ENJOY!
