Pasta w/ Vodka Sauce

Prep time: 5-8 minutes

Cook time: 15-20 minutes

Materials:

  • 1 box penne pasta
  • 1 onion chopped
  • 3-4 garlic cloves diced
  • 3 tbsp. unsalted butter 
  • 2 tbsp. olive oil
  • 3/4 cup vodka 
  • 2 cups crushed tomatoes 
  • 1 1/2 cups heavy cream
  • 1/2 cup grated parmesan cheese
  • Pinch of red pepper flakes 
  • Salt and pepper to taste

Process:

  1. Cook the pasta according to package instructions.
  2. In a large skillet with high sides add in the unsalted butter and olive oil. 
  3. Keeping the heat on medium/ high let the butter melt.
  4. Add in the onion and cook until onions are soft and translucent, stirring often.
  5. Add in the garlic. Cook for about 60 seconds stirring constantly.
  6. Add in the vodka and let simmer for a few minutes, stirring occasionally.
  7. Add in the crushed tomatoes and cook for a few minutes. 
  8. Add in the heavy cream and mix well to combine. 
  9. Season with salt, pepper and red pepper flakes. Once incorporated, add in the cooked pasta.
  10. Mix well and remove from heat.
  11. Add in the parmesan cheese and mix well to incorporate. 
  12. Plate and ENJOY!
