Prep time: 20-25 minutes
Cook time: 15-20 minutes
Materials:
- 2 chicken breasts cut into desired size cutlets
- 2 tomatoes diced
- ¼ small onion chopped
- 5-6 basil leaves julienned
- 3 eggs
- ¼ cup flour
- 1 cup bread crumbs
- Salt and pepper to taste
- 1 tsp dried parsley
- Parmesan cheese (grated) to taste
- Vegetable oil
- 1 tbsp. Olive oil
- ½ cup shredded mozzarella
Process:
- Into a small mixing bowl add in the tomatoes, onion and basil. Season with salt and drizzle with the olive oil. Mix well and set aside.
- Take each piece of chicken and using a meat mallet, beat the chicken slightly.
- Season each piece with salt and pepper.
- In a deep dish add in the eggs and season with salt, pepper and parmesan cheese. Mix well.
- In a separate deep dish add in the flour and breadcrumbs. Season with salt, pepper, dried parsley and parmesan cheese. Mix well.
- Dip each chicken cutlet in the egg and then immediately into the breadcrumb mixture, making sure to coat both sides well.
- Add directly into a hot skillet with vegetable oil over medium/low heat. Cook 2-3 minutes on each side (cooking time may vary depending on thickness of cutlet).
- Once out of the pan top immediately with mozzarella cheese.
- Toast your favorite bread or bun and top it with the cheesy cutlet.
- Top with desired amount of tomato mixture and some additional parmesan cheese.
- Plate and ENJOY!
