Chicken Cutlet Open Faced Sandwiches

Prep time: 20-25 minutes

Cook time: 15-20 minutes

Materials:

  • 2 chicken breasts cut into desired size cutlets 
  • 2 tomatoes diced
  • ¼ small onion chopped
  • 5-6 basil leaves julienned 
  • 3 eggs
  • ¼ cup flour
  • 1 cup bread crumbs
  • Salt and pepper to taste
  • 1 tsp dried parsley
  • Parmesan cheese (grated) to taste
  • Vegetable oil
  • 1 tbsp. Olive oil
  • ½ cup shredded mozzarella

Process:

  1. Into a small mixing bowl add in the tomatoes, onion and basil. Season with salt and drizzle with the olive oil. Mix well and set aside.
  2. Take each piece of chicken and using a meat mallet, beat the chicken slightly. 
  3. Season each piece with salt and pepper.
  4. In a deep dish add in the eggs and season with salt, pepper and parmesan cheese. Mix well.
  5. In a separate deep dish add in the flour and breadcrumbs. Season with salt, pepper, dried parsley and parmesan cheese. Mix well.
  6. Dip each chicken cutlet in the egg and then immediately into the breadcrumb mixture, making sure to coat both sides well.
  7. Add directly into a hot skillet with vegetable oil over medium/low heat. Cook 2-3 minutes on each side (cooking time may vary depending on thickness of cutlet). 
  8. Once out of the pan top immediately with mozzarella cheese.
  9. Toast your favorite bread or bun and top it with the cheesy cutlet.
  10. Top with desired amount of tomato mixture and some additional parmesan cheese.
  11. Plate and ENJOY!
