Spring Time Carbonara

Materials:

  • 1 box spaghetti (cooked Al dente according to package instructions)
  • Pancetta
  • 1/2 cup peas
  • 1 cup spinach
  • 1/3 cup grated Parmesan
  • 1 tbsp. olive oil
  • 1/4 tsp red pepper flakes
  • Salt & pepper to taste
  • Juice of 1/2 lemon

Process:

  1. Cook pasta according to package directions. Drain and set aside. Also reserve 1/4 cup of cooked pasta water.
  2. Into a skillet with high sides add in the olive oil and pancetta. Cook over medium/high heat until pancetta is fully cooked through.
  3. Add in the peas and the spinach. Cook until spinach wilts.
  4. Add in the cooked pasta along with the reserved pasta water.
  5. Season with pepper and additional salt if needed.
  6. Remove from heat and add in grated parmesan.
  7. Sprinkle in some lemon juice, plate and ENJOY!
