Materials:
- 1 box spaghetti (cooked Al dente according to package instructions)
- Pancetta
- 1/2 cup peas
- 1 cup spinach
- 1/3 cup grated Parmesan
- 1 tbsp. olive oil
- 1/4 tsp red pepper flakes
- Salt & pepper to taste
- Juice of 1/2 lemon
Process:
- Cook pasta according to package directions. Drain and set aside. Also reserve 1/4 cup of cooked pasta water.
- Into a skillet with high sides add in the olive oil and pancetta. Cook over medium/high heat until pancetta is fully cooked through.
- Add in the peas and the spinach. Cook until spinach wilts.
- Add in the cooked pasta along with the reserved pasta water.
- Season with pepper and additional salt if needed.
- Remove from heat and add in grated parmesan.
- Sprinkle in some lemon juice, plate and ENJOY!
