Materials:
- 3 lb. pork loin
- 4 large garlic cloves smashed
- 1 large onions quartered
- 1 jalapeño diced (add more if you like 🌶️)
- 1/3 cup orange juice (fresh squeezed)
- 1/4 cup fresh lime juice
- 1 1/2 tsp marjoram
- 1 tsp oregano
- 1/4 tsp cumin
- 1 tsp chili powder (add more if you like it 🌶️)
- Salt and pepper to taste (I used 1 tbsp. salt & 1/4 tsp pepper)
- 3 tbsp. unsalted butter cut into slices
Process:
- In a small mixing bowl combine the marjoram, oregano, cumin, chili powder, salt and pepper.
- Take the mixture and rub it all over the pork loin making sure to get all the surface space of the pork loin.
- Place the onion, garlic and jalapeno and place it in the bottom of the slow cooker.
- Place the seasoned pork loin over the onion, garlic and jalapeno mixture.
- Pour the orange juice and lime juice over the pork and place the slices of butter over the pork.
- Cook the pork on low for 8 hours.
- After 8 hours you should be able to shred the pork no problem with 2 forks. (I remove the onion and whole garlic and blend it up to add to my salsa but you can dispose of them, or you can just leave them in and incorporate them in with the pork).
- Once shredded you can assemble your tacos.
- Before assembling make sure to heat your tortillas over an open flame or in a skillet.
- Now you can assemble and ENJOY!
