Easter Blondies

Prep time: 15 minutes

Cook time: 26-28 minutes

Materials:

  • 2 cups flour sifted
  • 1/2 tsp baking soda
  • Pinch of salt
  • 2 eggs at room temperature
  • 1 cup unsalted butter (2 sticks) melted and cooled
  • 1 1/4 cup brown sugar
  • 1 tbsp. vanilla extract
  • 1 cup crushed chocolate eggs of your choice
  • 1/4 cup chocolate M&M’s

Process:

  1. Preheat the oven to 350 degrees F and line a rectangular cake pan (9 inch x 11 inch) with some parchment paper and non stick oil.
  2. In a medium sized mixing bowl combine the flour, baking soda and salt. Mix and set aside.
  3. In another mixing bowl combine the brown sugar and melted butter. Using a hand held mixer mix until sugar dissolves and mixture is fluffy.
  4. Add in one egg at a time and continue to mix well after each egg.
  5. Add in vanilla extract and continue to mix.
  6. Gradually start to mix in the flour making sure to stop and scrape the edges of your bowl.
  7. Fold in the crushed chocolate eggs.
  8. Pour the mixture into your prepared pan and top with some M&M’s using your fingers to gently push them into the batter.
  9. Bake for 26-28 minutes or until fully cooked through.
  10. Let cool completely before cutting into the bars.
