Prep time: 15 minutes
Cook time: 45-50 minutes
Materials:
- 8 chicken thighs (bone in & skin on)
- 3-4 tbsp. vegetable oil
- Juice of 1 lemon
- 4 garlic cloves finely diced
- 1 tbsp. dried oregano
- 1/4 tsp ground mustard seed
- 1 tsp dried thyme
- Salt and pepper to taste
Process:
- Combine all the above ingredients in a large mixing bowl making sure the chicken is evenly coated. Cover and refrigerate over night (or a minimum of 6 hours).
- When ready to bake preheat the oven 385 degrees F.
- Place the chicken skin side up in a square or rectangular baking sheet.
- Bake 45-50 minutes or until chicken is fully cooked through. To get some more color on the chicken you can place it under the broiler for 2-3 minutes.
- Top with fresh lemon slices (optional), serve and ENJOY!
