Lemon Garlic Baked Chicken Thighs

Prep time: 15 minutes

Cook time: 45-50 minutes

Materials:

  • 8 chicken thighs (bone in & skin on)
  • 3-4 tbsp. vegetable oil
  • Juice of 1 lemon
  • 4 garlic cloves finely diced
  • 1 tbsp. dried oregano
  • 1/4 tsp ground mustard seed
  • 1 tsp dried thyme
  • Salt and pepper to taste

Process:

  1. Combine all the above ingredients in a large mixing bowl making sure the chicken is evenly coated. Cover and refrigerate over night (or a minimum of 6 hours).
  2. When ready to bake preheat the oven 385 degrees F.
  3. Place the chicken skin side up in a square or rectangular baking sheet.
  4. Bake 45-50 minutes or until chicken is fully cooked through. To get some more color on the chicken you can place it under the broiler for 2-3 minutes.
  5. Top with fresh lemon slices (optional), serve and ENJOY!
