Cook time: 10-15 minutes
Materials:
- 3/4 lb. shrimp
- 2 packets of your favorite ramen noodles (seasoning removed and thrown away)
- 1 tbsp. vegetable oil
- Salt and pepper to taste
- 2 tbsp. unsalted butter
- 4-5 cloves of garlic diced
- 2 tsp brown sugar
- 2 tbsp. low sodium soy sauce
- 1 tbsp. fish sauce
- 1/4 tsp chili pepper flakes (more if you like it spicy)
- 1 small onion sliced into half moons
- Hand-full of Chinese broccoli cut into bite size pieces
- Handful of snap peas ends trimmed
- Green onions diced (garnish)
Process:
- Cook the ramen in boiling water (do not salt the water), drain and set aside.
- In a small mixing bowl combine the brown sugar, low sodium soy sauce, fish sauce and red pepper flakes. Mix well and set aside.
- In a skillet with high sides add in the vegetable oil. Keeping the heat on medium/ high add in the shrimp and season with salt and pepper. Cook 2-4 minutes on each side and remove onto a clean plate.
- In the same skillet add in the the unsalted butter. Once melted add in the garlic and cook stirring constantly until garlic becomes fragrant (about 60 seconds).
- Add in the onion and cook for a few minutes until the onions soften.
- Add in the remaining veggies (Chinese broccoli and snap peas) and cook for 2-3 minutes.
- Add in the cooked ramen along with the cooked shrimp.
- Pour the soy sauce mixture over the noodles and stir well to make sure everything is coated in the sauce. Cook for an additional 1-2 minutes and then remove from the heat.
- Garnish with green onions, plate and ENJOY!
