One Pot Turkey & Rice

Materials:

  • 1 tbsp. ground turkey
  • 2 cups white rice
  • 1 large onion chopped
  • 3 garlic cloves diced
  • 2 cups chopped spinach
  • 1/4 cup tomato paste
  • 4 cups chicken stock
  • 1/2 tbsp. sugar
  • 1 tsp oregano
  • 1 tbsp. paprika
  • 1 tsp dried parsley
  • 1/4 tsp red pepper flakes
  • Salt & Pepper to taste
  • 2 tbsp. olive oil

Process:

  1. In a skillet with high sides add in the olive oil. Keeping the heat on medium/ high add in the onions and season with a pinch of salt. Cook, stirring often until the onions are cooked (about 3-4 minutes).
  2. Add in the garlic and cook until fragrant (about 60 seconds).
  3. Add in the spinach and cook until wilted.
  4. Once the spinach has wilted add in the ground turkey. Cook, breaking the turkey up until the turkey is fully cooked through.
  5. Add in the tomato paste and stir to incorporate it into the meat and veggie mixture.
  6. Season with salt and pepper and add in the chicken stock.
  7. Add in the sugar, oregano, paprika, parsley and red pepper flakes. Mix well to combine.
  8. Add in the rice and mix to incorporate.
  9. Bring the mixture to a boil and lower the heat to low (making sure it stays at a simmer), cover and cook until rice is fully cooked through (about 20-25 minutes).
  10. Remove from heat, garnish with some fresh parsley (optional) and ENJOY!
