Materials:
- 1 tbsp. ground turkey
- 2 cups white rice
- 1 large onion chopped
- 3 garlic cloves diced
- 2 cups chopped spinach
- 1/4 cup tomato paste
- 4 cups chicken stock
- 1/2 tbsp. sugar
- 1 tsp oregano
- 1 tbsp. paprika
- 1 tsp dried parsley
- 1/4 tsp red pepper flakes
- Salt & Pepper to taste
- 2 tbsp. olive oil
Process:
- In a skillet with high sides add in the olive oil. Keeping the heat on medium/ high add in the onions and season with a pinch of salt. Cook, stirring often until the onions are cooked (about 3-4 minutes).
- Add in the garlic and cook until fragrant (about 60 seconds).
- Add in the spinach and cook until wilted.
- Once the spinach has wilted add in the ground turkey. Cook, breaking the turkey up until the turkey is fully cooked through.
- Add in the tomato paste and stir to incorporate it into the meat and veggie mixture.
- Season with salt and pepper and add in the chicken stock.
- Add in the sugar, oregano, paprika, parsley and red pepper flakes. Mix well to combine.
- Add in the rice and mix to incorporate.
- Bring the mixture to a boil and lower the heat to low (making sure it stays at a simmer), cover and cook until rice is fully cooked through (about 20-25 minutes).
- Remove from heat, garnish with some fresh parsley (optional) and ENJOY!
