Chili Mac & Cheese

Prep time: 15 minutes

Cook time: 30-40 minutes

Materials:

  • 1 lb. ground turkey
  • 3 garlic cloves
  • 1 large onion
  • 14 oz. tomato sauce
  • 4 cups chicken stock
  • 2 cups short pasta
  • 1 can black beans
  • 1/4 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 cups short pasta
  • 1 tsp sugar
  • 1 tsp marjoram
  • 2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 tbsp. olive oil

Process:

  1. In a soup pot or Dutch oven add in the olive oil. Keeping the heat on medium/ high add in the onion and cook until translucent (about 2-3 minutes).
  2. Add in the garlic and cook for about 60 seconds or until fragrant.
  3. Add in your ground turkey and cook breaking the turkey up with a spatula or wooden spoon. Cook until ground turkey is fully cooked through, about 3-5 minutes.
  4. Season with salt and pepper.
  5. Add in the tomato sauce and mix well to incorporate.
  6. Season with sugar, marjoram, chili powder, cayenne pepper and mix well to incorporate.
  7. Add in the chicken stock and black beans. Mix well to incorporate.
  8. Bring the mixture to a boil and add in the pasta.
  9. Lower the heat to a simmer and cook until the pasta softens.
  10. Add in the heavy cream and cook for2-3 minutes.
  11. Remove from heat and add in the cheese. Stir to incorporate.
  12. Plate and ENJOY!
