Lasagna Soup

Materials:

  • 1 lb. ground turkey or beef
  • 1 onion chopped
  • 4 garlic cloves diced
  • 10-12 lasagna noodles broken up
  • 14- 15 oz. tomato sauce
  • 6 cup chicken stock
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1 tsp sugar
  • 1 tbsp. Italian seasoning
  • 1 tsp marjoram
  • 1 tsp oregano
  • Salt and pepper to taste
  • 2 tbsp. olive oil

Process:

  1. In a soup pot add in the olive oil.
  2. Keeping the heat on medium/ high add in the onion and cook 3-4 minutes stirring often.
  3. Add in the garlic and cook until fragrant, about 60 seconds.
  4. Add in your ground meat and cook breaking the meat up.
  5. Add in the tomato sauce and chicken stock. Mix well.
  6. Season with sugar, Italian seasoning, marjoram, oregano, salt and pepper. Mix well.
  7. Bring the mixture to a boil and add in the broken up lasagna noodles.
  8. Lower to a simmer, cover and cook until lasagna noodles are fully cooked through.
  9. Shut the heat off and add in the ricotta and mozzarella cheeses. Mix well to incorporate.
  10. Plate and serve with your favorite garlic or crusty bread. ENJOY!
